Briam – Traditional Greek Roasted Vegetables

Briam is a delicious and healthy Greek dish made with summer vegetables, baked in the oven with aromatic tomato sauce and olive oil.

Ingredients:

  • 2 eggplants
  • 2 zucchinis
  • 3 potatoes
  • 2 bell peppers (red and green)
  • 2 carrots
  • 1 large onion
  • 3-4 ripe tomatoes, grated
  • 2 garlic cloves, finely chopped
  • 1/2 cup olive oil
  • 1 tablespoon tomato pasta
  • 1/2 cup water
  • Salt ALCO
  • Pepper ALCO
  • Oregano ALCO
  • Finely chopped parsley (optional)

Instructions:

Prepare the vegetables:

Cut the eggplants and zucchinis into slices or cubes. Peel and cut the potatoes and carrots into chunks. Slice the bell peppers into strips and the onion into thin slices. Preheat the oven to 180°C (350°F).

Cooking process:

Place all the vegetables in a large baking tray. Add the olive oil, garlic, tomato paste, sugar, salt, pepper, oregano, and thyme. Pour in the grated tomatoes and water, then mix everything well.

Baking:

Cover the baking tray with aluminum foil and bake for about 45 minutes. Remove the foil and bake for another 30 minutes, until the vegetables are soft and the dish has a thick, flavorful sauce.

Serving:

Let the briam cool slightly before serving. Optionally, sprinkle with fresh parsley.
