Ingredients (Serves 2-3)
- 1 chicken breast, cut into cubes
- 250g orzo (half a package)
- 1 green bell pepper, finely chopped
- 1 small onion, finely chopped
- 2-3 tbsp olive oil
- 500ml chicken broth (or as needed)
- Salt
- Pepper
Instructions
In a pot or deep pan, heat the olive oil and sauté the onion and bell pepper until softened. Add the diced chicken and sear until golden on all sides. Stir in the orzo and sauté for 1-2 minutes to absorb the flavors. Gradually add the hot chicken broth, stirring constantly, just like making risotto. Continue cooking until the orzo is al dente and has a creamy texture. Season with salt and pepper to taste.
